Mikrobiologiczne zanieczyszczenie surowców drobiarskich w województwie lubelskim w latach 2002–2005

Abstract

The research material was made up by the carcasses of chickens and geese as well as cuts (chicken fillet). Salmonella rods, bacteria count from coli group and the total count of aerobes were determined. Among the examined poultry products, the most contaminated appeared to be chicken carcasses, especially in 2002 (58.59%). In the goose carcasses these bacteria were recorded in 2002 only and the contamination made up 16.67%. For the poultry cuts, the percentage of positive tests reached 50–60%. In the chicken carcasses the serological group of salmonella occurring most frequently was DO (31.54%), while BO (8.33%) most seldom. In the goose carcasses, BO group was recorded (16.67%) and in the cuts – DO (50.00%). Over the years 2002–2003 in the chicken carcasses, coli bacteria count/ cm2 of skin and total count of aerobes/cm2 exceeded the standards, whereas in 2004–2005 they were found within the normal range. Aerobes total count in the goose carcasses in 2002 surpassed the norm by 75.00%, while in 2003 by 25.00%. In the other years these microbes count was contained within the limits. Coli bacteria count did not exceed the valid standards throughout the experimental period.
