The effect of germination process on changes of protein fraction composition in spring barley cultivated in monoculture and crop rotation

Abstract

The effect of germination process on changes of total protein content and its fraction was evaluated in grain of spring barley (cultivars Rodos, Rambo, Start) cultivated in monoculture and crop rotation. It was found that the process positively (from the nutritional point of view) affected the significant increase of albumin and globulin levels. Neither clear variety differences nor the effect of varied plant succession on the determined components contents was found. Weather conditions during the experiment mostly affected the protein level and the percentage of its particular fractions.
