Aging leading to death is a universal process affecting all living organisms regardless their degree of complexity. Life longevity, determined by the pace of aging processes, is very diverse and plants show the largest range of variability. Aging processes also affect the seeds stored in long-term gene bank units. Preservation of viable seeds is essential for the protection of biodiversity, which is effectively and systematically destroyed. Studies on aging of seeds conducted so far have concerned, among others, silencing of metabolism, formation of reactive oxygen species and effects their presence causes, damage to biomolecules, DNA methylation, and recently, also small non-coding RNA molecules. The aim of this work is to present a complex, multilevel process that takes place in seeds during the long-term storage.
