Szczypiorek (Allium schoenoprasum L.) – biologia i uprawa

Abstrakt

Szczypiorek jest bardzo rozpowszechnioną byliną cebulową, zróżnicowaną genetycznie w zależności od miejsca występowania. Roślina nie tworzy typowej cebuli, częścią użytkową są rurkowate, cienkie liście, które mają lekko ostry smak i łagodny aromat cebulowy, służą jako popularna przyprawa do potraw, wyrobów garmażeryjnych i mleczarskich. Zawierają znaczne ilości witamin, soli mineralnych i przeciwutleniaczy. Szczypiorek tworzy wiązkowy system korzeniowy, podziemne, silnie skrócone kłącze, na którym w obrębie rośliny matecznej wyrastają pączki, dające początek nowym roślinom. Wzrost pączków prowadzi do podziału roślin matecznych; w okresie wegetacji zachodzi do 8 podziałów, w ich efekcie powstaje kępa złożona nawet z ponad 100 roślin połączonych kłączem. Podziały kończą się w okresie indukcji spoczynku fizjologicznego, którego termin i długość zależą głównie od temperatury i długości dnia. Szczypiorek można rozmnażać generatywnie, tworzy nasiona od drugiego roku uprawy, oraz wegetatywnie – przez podział kęp. Kępy po indukcji spoczynku wykorzystuje się do pędzenia, przy czym przed pędzeniem jesienią konieczne jest przerwanie spoczynku roślin, w późniejszym terminie zabiegi takie nie są konieczne.
