The paper presents the results of research on the process of cold extrusion of oil from non-fat and dehulled seeds of various soy varieties. The amount of oil obtained was evaluated using 3 heads with different diameters of the extrusion hole. In addition, the temperature and oil delivery time were measured under the same conditions and process parameters. Based on the obtained results, the influence of the diameter of the holes in the used press heads on the amount of extruded oil was demonstrated. The duration of the extrusion process was determined by the presence of the seed coat. Extrusion of oil from decorticated seeds on average was significantly longer than in the process of pressing uncrushed oil.
