A comparison of slaughter value and meat quality in JA 957 and ROSS 308 broiler chickens

Abstract

The experiment was conducted on two groups of chickens: JA 957 and ROSS 308, 100 heads in each (50 cockerels and 50 cocks). The birds were reared in a typical production building for 7 weeks, which were divided into 4 feeding periods. Chickens of the both groups received the feed mixtures of the same composition components, made only from raw materials of plant origin, an exception being a lack of a coccidiostat in mixtures for JA 957 chickens.

After completion of rearing it was shown that JA 957 chickens in comparison to ROSS 308 birds had the mean body weigh lower by 263 g (P ≤ 0.01), but they were characterized higher dressing percentage by 2.6 points % (P ≤ 0.01). Better musculature and less fatness of carcasses were found in ROSS 308 chickens (P ≤ 0.01). The genetic group of chickens did not affect the content of basal nutrients in both the assessed muscles, except for a significantly (P ≤ 0.05) higher content of crude ash in leg muscles of JA 957 birds. The breast muscles of certified chickens were characterized by a significantly improved (P ≤ 0.05) water holding capacity, a darker colour (P ≤ 0.01) with a higher (P ≤ 0.01) saturation of redness and lower (P ≤ 0.01) saturation of yellowness. Both muscles of JA 957 chickens obtained higher results in respect of the sensory quality (P ≤ 0.05).
