Determination of changeable in time shear and bulk modulus of apple flesh on the basis of stress relaxation tests

The paper presents results of stress relaxation tests under uniaxial stress and strain conditions. Tests were carried out on cylindrical samples of Rubin apple flesh. On that basis changeable in time bulk modulus and shear modulus were determined. Application of quasi-static and impact loading enabled to compare apple flesh behaviour at different initial deformation rates.
